Cold Flammkuchen

Flammkuchen base Ingredients

1 and 1/4 Plain Flour
1 and 1/4 Rye Flour
1 Sachet Active Yeast ( 7g)
1 Cup warm Water
1/2 Tbsp Sugar
1 Tsp Salt
1 Tbsp Olive Oil

TOPPING Ingredients

1 tub Coconut Collaborative Cr*me Fraiche
2 Sliced and Chargrilled King Oyster Mushrooms
Handful Lemon Thyme
2 Sliced Heirloom Tomatoes – Mix the colours!
Raw Red onion sliced thinly
1 Sliced & Chargrilled Pear
Handful Walnuts
Fresh Rosemary
Smoked Olives & Peppers
Rocket

Directions FOR BASE

Combine yeast, sugar and warm water in a bowl and let it mingle for 5 or so minutes. Resist the urge to stir it!
Sift flour and salt into a mixing bowl and make a small well in the middle
Once your yeast has made friends with the sugar, tip it into the well, add the oil and mix until a dough is formed.
Tip the dough onto a floured work surface and knead for 5 minutes or so
Cut dough in half and begin stretching out one ball using a pin at first and then placing over the top of your hands and using your knuckles to gently separate the dough. This makes you feel badass and works wonders for show factor. Try not to poke holes in it though!
Place thin Flammkuchen base onto a lightly floured baking tray and pre cook until golden and crispy
Let your base cool completely before spreading it generously with the Cr*me Fraiche. If you don’t give it enough time to cool, the Cr*me Fraiche will melt.
Top each section with your desired toppings, the fresher and crunchier, the better! Slice roughly and serve!
